Mexican pasta bake

I thought I'd do another post about great grub, after the excellent reception (read: 0 comments) of my last recipe.

The idea originally started out because I had some leftover taco meat, and wanted a quick dinner. New life to left over taco meat, and new taste to boring old pasta bake!

Here's what you need:

  • 400g mince
  • One Onion
  • Packet of taco seasoning (or a jar, if you can't stand powders)
  • Tin of tomatoes
  • Tomato paste
  • one quarter red and green capsicums; diced
  • Pickled jalapeños
  • 3 cups of pasta
  • Cheese. Tasty, mozzarella, and parmesan work well.

Put the pasta on.

Sauté onions until translucent. Add mince; cook until juicy. Add the taco seasoning.

Stir through until it comes thick. Remaining ingredients. Cook until capsicum stops being crunchy.

Toss it all in a baking dish, and throw it in the oven on 200º for 20 minutes (or until cheese is melted).

Again, I didn't think to take a photo before devouring it.
